Cooking Steps

Step 1 :

Soak the red kidney beans overnight before cooking them.

Step 2 :

Boil kidney beans with salt, turmeric,2-3 cups of water and red chili powder for 20 minutes.

Step 3 :

Peel and cut pumpkin in cubes and add to the beans.

Step 4 :

Blend together onions, green chilies, coconut and cumin seeds into a thick paste.

Step 5 :

Add this coconut paste to the beans mixture and cook for another 8-10 minutes.

Step 6 : For tempering

In a pan, heat coconut oil. When the oil is hot enough, add mustard seeds, curry leaves, dry red chillies along with grated coconut and stir fry until the mixture turns brownish.

Step 7 :

Add the tempering to the curry and cook it for another 5 minutes.

Step 8 :

Serve it with boiled red rice.
