Baingan Aloo ka Bharta as it is called in Bihar, is a delicious roasted mashed eggplant and potato dish that is served with sattu paratha. It is a traditional Bihari recipe that is eaten on a daily basis.

Step 1 :

Roast the baingans on a stove top or directly on the fire till it is cooked entirely and tender from all sides.

Step 2 :

Let it cool down, then peel it and mash.

Step 3 :

In the same manner, roast the tomatoes, peel it and mash it.

Step 4 :

Boil the potatoes, peel it and mash.

Step 5 :

Add the mashed baingan and tomatoes in a mixing bowl along with its juice, also add mashed potatoes to it.

Step 6 :

Add finely chopped onions, garlic, green chilies and coriander leaves.

Step 7 :

Add mustard oil and lemon juice for a tangy taste.

Step 8 :

Season it with salt, stir it well. Serve this dish hot with rotti.
