Hyderabadi Bhagara Baingan

Bhagara Baingan is a famous Hyderabadi side dish. This is a gravy recipe and is also consumed with biryani. It is rich in taste and is very easy to prepare.

Step 1 :

Roast onion in a slow tandoor. Once done, peel, chop and set it aside.

Step 2 :

Dry roast ginger and garlic for 3-4 minutes and remove it on a plate.

Step 3 :

Dry roast coconut until brown and remove it on a plate.

Step 4 :

Dry roast peanuts, sesame seeds, poppy seeds, dry red chilies and coriander seeds until brown and fragrant, set it aside on a plate.

Step 5 :

Add all the roasted ingredients in a blender and grind to make a smooth paste.

Step 6 :

Wash the brinjals, wipe them dry and cut into long pieces.

Step 7 :

Heat oil in a pan.

Step 8 :

When the oil is hot, fry the brinjal till slightly brown.

Step 9 :

Drain and keep it aside.

Step 10 :

In the same oil, add mustard seeds, fenugreek seeds and curry leaves.

Step 11 :

Let them crackle and then add the ground masala along with water.

Step 12 :

Cook the masala until oil starts to separate on the side of the pan.

Step 13 :

Add tamarind pulp, jaggery, red chili powder and salt.

Step 14 :

Cook for another 3-4 minutes.

Step 15 :

Add water to thin the gravy.

Step 16 :

Add the fried baingan and cook for another 2-3 minutes.

Step 17 :

Garnish with fresh coriander.

Step 18 :

Serve hot with phulka or rice.
