Lemon Berry Curd

This is a delicious and easy snack for kids in summers with goodness of yogurt and berries. Yogurt provides protein and calcium, vitamin C from lemon juice will boost kids' immunity. It has cooling effect and can be had at anytime of the day.

Step 1 :

Heat a vessel, add 1/2 cup of water along with 1/8 cup of sugar, when it melts switch off the heat and add gelatin. Gently mix it until it dissolves.

Step 2 : For the berry mixture

Take another vessel, saute strawberries with the remaining sugar till it softens.

Step 3 :

Switch off the flame and add dried cranberries to it.

Step 4 : For lemon curd

Take yogurt in a bowl, add lemon juice and whisk it for 2-3 minutes. Add the prepared sugar syrup and gently mix it for 2 minutes.

Step 5 :

Take a glass and pour 2 tbsp of the prepared berry mixture, then add a thick layer of lemon curd.

Step 6 :

Add a dollop of berry mixture in the middle.

Step 7 :

Decorate it with strawberries. Refrigerate it for an hour and serve it.
