This is a recipe that is not known by many. It tastes delicious and is accompanied with rice and curry. Carrot Pickle is liked by all at home.

Cooking Steps

Step 1 :

Peel carrots, wash and wipe the carrots dry with a kitchen towel.

Step 2 :

Cut the carrots into halves and half inch length and thin slices.

Step 3 :

Heat 125 ml oil in a pan. Add chilli powder, turmeric powder, methi seeds, sesame seeds and jeera.

Step 4 :

Add jaggery and vinegar, let it simmer for 7-8 minutes.

Step 5 :

Add the carrots and let it cook for 7-8 minutes.

Step 6 :

Add the remaining oil and let it simmer for some more time.

Step 7 :

Stir and mix it thoroughly. Let it cool down and put into glass jars.

Step 8 :

Keep for 2-3 days and then use with rice or rotis or as desired.
