Mango Rice Pudding

This is a rich creamy rice pudding with mango pulp. It can be served hot or chilled as a dessert. It is a perfect mouthwatering recipe in this mango season.

Step 1 :

Pressure cook rice with little extra water. Mash the cooked rice lightly with the help of a spoon. Don't make it in to a paste.

Step 2 :

In a thick bottom pan, boil milk. Simmer the flame and mix the cooked rice into it. Give it a good mix.

Step 3 :

Let the mixture become thick. Now, add condensed milk, ghee and sugar (as per the taste) and mix well.

Step 4 :

Stir continuously. Add finely powdered cashew nuts to the mixture and mix well. After the pudding turns thick and creamy, switch off the stove.

Step 5 :

Using a mixer, puree the mango pulp.

Step 6 :

Pour the mango puree into the pudding while it is still hot. Do not heat after mixing the mango puree into it, that may cause the pudding to curdle.

Step 7 :

Let the pudding cool down to room temperature and decorate it with cream or mango pieces.

Step 8 :

This dessert can also be served chilled with dry fruits and mango toppings.
