Cheesy Spinach and Sweet Corn Muffins

These muffins are healthy, yummy and easy to make. It can be stored for up to a week as well in the refrigerator.

Step 1 :

Preheat oven to 200°C.

Step 2 :

Place muffin cases each in a 6 hole muffin tray, set it aside.

Step 3 :

Heat oil and add 1 tbsp butter in a large frying pan over moderate heat.

Step 4 :

Add onion and saute it stirring occasionally until the onion has softened and is lightly golden.

Step 5 :

Add vinegar and stir 5 minutes or until it is reduced and sticky. Allow it to cool in the pan.

Step 6 :

Meanwhile, using hands, squeeze excess liquid from spinach.

Step 7 :

Sift flour, baking powder and salt into a large bowl.

Step 8 :

Add half cheese, spinach and onion mixture; stir to combine.

Step 9 :

Add drained corn, egg, milk and remaining melted butter; stir well to combine. Don't overmix.

Step 10 :

Spoon the mixture evenly into prepared muffin liners in the muffin tray.

Step 11 :

Sprinkle the tops with remaining cheese.

Step 12 :

Bake 30 minutes or until a skewer inserted at the center comes out clean. Cool for 5 minutes in the tray, then transfer it to a wire rack to cool completely.
