Step 1 :

Peel potatoes and raw banana. Cut all the vegetables in 1-3-inch pieces.

Step 2 : To prepare the shukto masala

Heat panch foron and mustard seeds in a pan, once done powder this in a grinder and set it aside.

Step 3 :

Heat mustard oil and add ginger paste along with sugar, salt, whole dry red chilies, cumin jeera and bay leaves. Saute it for a minute.

Step 4 :

Add all the vegetables and saute it in the above mixture. Then cover and shallow fry the vegetables for 7 minutes by tossing them from time to time.

Step 5 :

Add a cup of water then cover it with a lid and cook it for another 10 minutes over medium heat.

Step 6 :

Add milk and allow the curry to simmer for 2 minutes, add in the bori.

Step 7 :

Allow it to cook for 3-4 minutes, covered with a lid. Finally turn off the heat, add ghee and the shukto masala.

Step 8 :

Enjoy your bowl of shukto with some rice.
