This is a unique thandai recipe, the core ingredient of this drink is fresh coconut.

Step 1 :

Heat milk, add sugar and saffron to it and stir it till sugar dissolves completely and remove it from the flame.

Step 2 :

Allow the milk to cool down to room temperature.

Step 3 :

Grind soaked and peeled almonds, melon seeds and soaked poppy seeds into a smooth paste, using a grinder.

Step 4 :

Grind fennel seeds, peppercorns, rose petals, freshly grated coconut and cardamom into fine paste.

Step 5 :

Add both the prepared paste to the boiled milk.

Step 6 :

Mix well and refrigerate it for an hour to allow the mixture to infuse into the milk.

Step 7 :

Strain the mixture through a fine sieve and discard the solids.

Step 8 :

Add coconut milk and rose water, mix by stirring the milk well.

Step 9 :

Serve it chilled after garnishing it with chopped almonds and saffron strands.
