Rice is always accompanied by raita in India. This raita recipe is quick to prepare and at the same time very healthy.

Step 1 :

Wash, clean and finely chop the spinach leaves.

Step 2 :

Transfer it to microwavable bowl and place it in the microwave on high for about 2 minutes.

Step 3 :

Once done, take it out and mash it slightly.

Step 4 :

Now, set it aside to cool down to room temperature.

Step 5 :

Dry roast peanuts separately, allow it to cool a bit and crush it well.

Step 6 :

Add salt and crushed peanuts to the spinach and mix it well.

Step 7 :

Heat oil in a pan, add mustard seeds, dry chillies and hing to it.

Step 8 :

Remove the pan from the stove once the chillies turn slightly brown in colour.

Step 9 :

Pour the prepared seasoning in the spinach mixture.

Step 10 :

Add curd to the spinach mixture and mix it well to combine.

Step 11 :

Serve it with hot rice.
