Tomato Carrot Soup

This is an easy to make tomato soup that has carrot as a core ingredient too with no added cornflour.

Step 1 :

Boil tomatoes and carrots in a pressure cooker and cook it for 5 whistles.

Step 2 :

Allow it to cool down and blend it together in a blending jar.

Step 3 :

Strain the mixture with a strainer.

Step 4 :

In a wok, add butter and allow it to melt.

Step 5 :

Now, add 2 tbsp each of finely chopped raw carrots and capsicum, increase the flame to high heat.

Step 6 :

Saute it for a minute. Then add the strained puree and let it boil.

Step 7 :

Add black pepper powder and salt to taste. Adjust the consistency if required with water.

Step 8 :

And your yummy soup is ready. Serve it hot with crispy croutons.
