Creamy Cauliflower Soup

It is a healthy, tasty and filling soup. It is easy to prepare and it makes a good appetizer.

Step 1 :

In a pressure cooker, add cauliflower florets, spinach, peeled potato and garlic with some water and a pinch of salt.

Step 2 :

Cook these ingredients until each of them is tender and soft.

Step 3 :

Once done, add these cooked ingredients in a blender and blend well into a smooth paste.

Step 4 :

In a frying pan, heat butter on medium flame.

Step 5 :

Add curry leaves, paneer, baby corn, grated coconut and carrot to it. Saute it till well cooked and aromatic.

Step 6 :

Transfer the sauteed ingredients to a thick bottom pan and cook it on low flame and add the smooth puree to it.

Step 7 :

Add salt and black pepper to it and bring it to a boil. If needed, add a little water to balance the consistency.

Step 8 :

Once done, pour it into bowls and serve it hot!
