Step 1 :
Heat a deep pan on high flame and add chopped red bell pepper and onion. Drizzle oil and allow it to char.
Step 2 :
Once done, lower the flame. Add chopped beetroot, potato, ginger and garlic. Saute it well.
Step 3 :
Add enough water to submerge the ingredients. Add butter to it and turn the heat to high and bring the water to a boil.
Step 4 :
Once it starts to bubble, turn the flame to medium. Add salt as per taste.
Step 5 :
Cover it with a lid and simmer till everything is cooked.
Step 6 :
Once done, puree everything in a blender.
Step 7 :
Take the puree in the same pan. Keep it on medium heat and add water if needed.
Step 8 :
Add black pepper as per taste and adjust the salt.
Step 9 :
Add yogurt to it and stir immediately to blend well.
Step 10 :
The soup is ready. Serve it with feta cheese cubes. Garnish it with yogurt and enjoy it hot!
