This is a healthy recipe for a side dish, it can be eaten with chapati or rice.

Step 1 :

Wash the bitter gourd and scrape them with a peeler.

Step 2 :

Slit them lengthwise and deseed them. Roughly cut them into thin roundels.

Step 3 :

Apply some salt and turmeric and set aside for 10 minutes.

Step 4 :

Later apply pressure between palms to squeeze out the excess water.

Step 5 :

Heat little oil in a kadai and add the chopped bitter gourd pieces to it.

Step 6 :

Sauté for sometime on low-medium flame.

Step 7 :

Cover and cook for 2 minutes stirring occasionally. Remove aside.

Step 8 :

In the same kadai, add some oil, jeera, turmeric powder, red chilli powder, tamarind paste, chopped onion and jaggery. Mix it well and allow it to cook.

Step 9 :

Then, add the fried bitter gourd pieces, adjust seasoning. Mix well and cook till it is done.

Step 10 :

Lastly, sprinkle some salt and chat masala.

Step 11 :

Have it hot with boiled rice or roll it into chapatis.
