Hummus Dip

Hummus is an excellent crowd-pleaser. It requires only 5 minutes of active effort time. It is packed with fibre, protein and healthy fats & full of flavour. This hummus can be served with tortilla chips, pita bread, cucumber sticks, carrot sticks, bread toast or anything else you like thus giving you a proper chip & dip platter for a party.

Step 1 :

Soak chickpeas in 1 litre of water for 8-9 hours or overnight.

Step 2 :

Drain the water, rinse the chickpeas and pressure cook it with salt and 3 cups water for 7-8 whistles.

Step 3 :

While the chickpeas cools down, roast the sesame seeds till it starts to turn brown.

Step 4 :

In a grinder, put roasted sesame seeds, cooled chickpeas, garlic, cumin powder, chilli powder and lemon juice and grind it into a fine paste.

Step 5 :

Pour virgin olive oil in a thin stream into the mixture while it is still grinding.

Step 6 :

Taste the hummus and adjust seasoning as required. Adjust the consistency by adding chickpea water or more oil.

Step 7 :

Add a handful of coriander leaves or pulp of 1 roasted red bell pepper to get 2 more varieties of hummus.
