This Watermelon Mousse is a soft, smooth, delicious dessert! For a mousse, the consistency is important and this is so soft that it melts in the mouth!

Step 1 :
Take watermelon pieces and blend well in a blender. Strain the juice and make sure you have 2 and 1/4 cups of juice.
Step 2 :
Set aside the 1/4 cup of juice add gelatin to it. Allow it to rest for 5 minutes.
Step 3 :
Take the remaining 2 cups of juice in a saucepan and heat it on medium flame. Bring it to a boil.
Step 4 :
Add sugar and stir well till it dissolves.
Step 5 :
Now, add the watermelon and gelatin mixture to the saucepan and stir until the gelatin dissolves.
Step 6 :
Take if off from the flame and let it cool.
Step 7 :
Take cream in a bowl and add vanilla extract to it. Beat the cream until stiff peaks are formed.
Step 8 :
Add the cooled watermelon juice and whip slowly until it is well combined.
Step 9 :
If there are bubbles, let it settle and then pour it into serving bowls.
Step 10 :
Cover and refrigerate it for an hour and then garnish it with small watermelon pieces and serve.
