This barley soup is healthy as it contains whole grains and is high in fiber content. It contains fresh vegetables like carrots, celery, tomatoes.

Cooking Steps

Step 1 :

Boil 4 cups of water in a vessel and prepare the vegetable soup as per the instructions given. Use 4 packs to procure at least 3 cups of vegetable stock.

Step 2 :

Now, heat oil in a large vessel over medium heat.

Step 3 :

Add ginger, garlic and saute until it is fragrant for about 30-40 seconds.

Step 4 :

Add chopped onions and saute until light golden brown for about a minute or two.

Step 5 :

Then, add barley, finely diced celery, carrots, tomato, salt and pepper. Add the prepared vegetable stock and allow it to boil.

Step 6 :

Simmer on low heat for about 30 minutes or until the barley is cooked.

Step 7 :

Garnish it with spring onions and serve it warm to enjoy the barley soup better!
