This recipe is for those guilt-free indulgences you always crave for, on your 'healthy' diet days. It is high in fiber and iron.

Cooking Steps

Step 1 :

In a bowl, add milk and vinegar. Allow it to rest for 10 minutes.

Step 2 :

Puree the dates with a little water.

Step 3 :

Whisk in the melted butter, egg and pureed dates in the milk-vinegar mix.

Step 4 :

In another bowl, take coffee, baking powder, wheat flour and sugar. Mix it well together.

Step 5 :

Put dry ingredients into the wet mixture bowl and mix till it just combines.

Step 6 :

Let it rest for 10 minutes.

Step 7 :

Heat a non stick tawa on medium heat and gently scoop out 1/4 cup of batter for each pancake and pour it on the tawa.

Step 8 :

Flip the pancakes when bubbles start appearing on the top surface.

Step 9 :

Cook the other side for a minute or two.

Step 10 :

Serve it warm with a generous drizzle of honey and fresh fruits.
