This pancake recipe is nourishing as many ingredients have been replaced with healthier ones - Maida with atta, maple syrup with honey and cream with sweetened hung curd.

Step 1 :

Powder 2 tbsp sugar, almonds and cashew nuts in a mixer.

Step 2 :

Strain the curd in a muslin cloth for half an hour and discard the water.

Step 3 :

In a bowl, add the curd and sugar mixture together. Beat it well and refrigerate it.

Step 4 :

In another bowl, beat the egg, add most of the milk, atta, vanilla essence and 2 tbsp sugar. Mix well with a spoon till the consistency is smooth.

Step 5 :

Add oil, baking soda and slowly add the remaining milk till the batter is of pouring consistency and mix again.

Step 6 :

Heat oil in a pan and pour the batter on it. Allow it to cook for a few minutes.

Step 7 :

Once done, flip it over and cook the other side.

Step 8 :

Garnish it with a dollop of hung curd prepared earlier, chopped fruits and a drizzle of honey. Serve it warm.
