Step 1 :
In a saucepan, bring milk to a boil, add vinegar all at once, keep brisk stirring till the milk curdles and turns clear, wait till the greenish-yellow whey separates.
Step 2 :
Add a little extra vinegar if the whey is milky.
Step 3 :
Strain the paneer through a clean, thin piece of cloth, tie up the cloth tightly and keep it suspended for two hours till all the whey drips off and the paneer turns firm.
Step 4 :
Take the paneer out of the cloth onto a plate and mash it well.
Step 5 :
Add in all the other ingredients and mix well. Add a little more powdered sugar if desired.
Step 6 :
Heat the oven to 150 degrees and grease an 8-inch square oven-proof dish with a little butter or ghee.
Step 7 :
Spread the sandesh mixture evenly on this dish and smoothen the top.
Step 8 :
Bake it in the preheated oven for about 15 minutes or till the top of the sandesh turns a pale golden in colour.
Step 9 :
Cool in a refrigerator for 15 minutes, cut into squares and serve.
