Chennai Style Veg Biryani

This recipe is different from the usual Biryani dishes as it has a Chennai style to it.

Step 1 :

Soak the basmati rice in water for 20 minutes, peel all the mentioned vegetable skins and slice it.

Step 2 :

Now take oil in a pan, add garam masala.

Step 3 :

After 2 minutes, add chopped onions, fry it till golden brown, add ginger garlic paste and saute it till the raw aroma vanishes.

Step 4 :

Now, add tomatoes and salt, saute it till cooked. Add vegetables and saute it for 5 minutes, add red chilli powder, toss it for 1 minute, add curd and the washed rice.

Step 5 :

Allow it to cook for 2 minutes and add chopped mint and coriander leaves.

Step 6 :

Add 4 cups of water and cover it with a lid, allow it to cook for 20 minutes, once done switch of the gas and wait for 10 minutes before serving the vegetable biryani.
