Cooking Steps

Step 1 :

Wash and soak basmati rice for 10-15 minutes.

Step 2 :

Dry roast all the dry fruits and keep aside.

Step 3 :

In a heavy bottom pan heat, heat ghee and fry cloves and a bay leaf till aromatic.

Step 4 :

Add soaked rice and fry it carefully for a minute, ensure that the rice does not break.

Step 5 :

Add about a cup of water along with raisins and let it boil.

Step 6 :

When the rice is parboiled, add sugar and saffron. Let it simmer till the rice cooks completely.

Step 7 :

When the rice is cooked completely, add rose water and green cardamom.

Step 8 :

Garnish it with roasted dry fruits.
