Coconut Milk Rice

Step 1 :

Rinse basmati rice well in water till the water runs clear of the starch. Soak the rice in water for 20 minutes. After 20 minutes, drain the water and keep the rice aside.

Step 2 :

When the rice is soaking, prep up the veggies by chopping them. Cut onions into thin slices, crush ginger, garlic and green chilli.

Step 3 :

Heat oil in a pressure cooker and add cloves, cardamoms, cinnamon, mace and cumin seeds. Saute the spices till they splutter and become aromatic.

Step 4 :

Now, add onions, curry leaves and a bay leaf and saute the spices. Stir well.

Step 5 :

Then add, crushed ginger, garlic, green chili paste. Saute till the raw aroma of ginger and garlic goes away.

Step 6 :

Add green peas and chopped french beans. Stir and saute the veggies for a minute.

Step 7 :

Now, add rice grains and gently stir the grains with the rest of the ingredients.

Step 8 :

Pour thick coconut milk and add water to it. Stir it well and allow it to cook.

Step 9 :

Season the grains with salt. Ensure the stock tastes slightly salty.

Step 10 :

Cover the cooker with the lid and pressure cook it for 2 whistles or for 8 minutes.

Step 11 :

When the pressure settles down naturally, open the lid and gently fluff the rice.

Step 12 :

Garnish it with some chopped coriander leaves. Serve it with raita, or some pickle.
