Ragi Modak

Modak is a sweet dish often prepared for ganpati pooja. It is a stuffed dumpling consisting of grated coconut and jaggery, loved by all members of my family. Usually modaks are made with rice flour but to give this sweet dish a healthy twist, millets can be used. Make the modak dough with ragi, it is very easy to prepare and is the healthiest.

For dough

Step 1 :

In a pan of water, heat jaggery and stir it till it dissolve.

Step 2 :

In another pan, heat 3 tbsp ghee, add ragi flour. Mix well and roast it on a low heat for 3-5 minutes. It should have no lumps and must be coated with ghee.

Step 3 :

Switch off the stove and add 1 cup milk and 1 +1/4 cup of water, stir it continuously to prevent lumps.

Step 4 :

Add elaichi powder and cook on a very low flame until water is absorbed.

Step 5 :

Cook until the mixture leaves the side of the pan, add ghee in between when it becomes sticky.

Step 6 :

Filter the jaggery syrup you prepared earlier and mix it with the mixture.

Step 7 :

Cover the pan and allow it to cook for next 10 minutes. Switch off the flame and let it cool.

Step 8 :

Knead the mixture to a smooth dough when it is still warm.

For Stuffing

Step 1 :

Mix the filtered jaggery water with coconut and cardamon powder. Begin to this mixture till it is thick and solid. Switch off the flame and add sesame seeds. Do not overcook the mixture.

For Modak

Step 1 :

Grease the mould with ghee. Take small portions of ragi dough, spread it and make a hole in the centre. Stuff it with the stuffing and seal it. Give your modak a beautiful shape. (You can also use modak moulder for a perfect shape.)

Step 2 :

Steam them in idly steamer for just 3-5 minutes and serve hot. The aroma of cardamom, healthiness of ragi and sweetness of jaggery makes this recipe everyone's favorite.
