The salad is sweet, sour and has noodles. Yes, you read it right, Cucumber noodles tossed in a yummy homemade sweet and sour dressing. It's a refreshing salad for the hot summer days.

Step 1 :

Attach the julienne blade to the mandolin and adjust it to the 1/8-inch-thick setting.

Step 2 :

Applying medium pressure, carefully run one of the cucumbers down the blade to form noodles, slicing until you reach the core.

Step 3 :

Rotate the cucumber a quarter turn and continue slicing and rotating until you've cut the entire cucumber.

Step 4 :

In a large bowl add chopped red onion, sugar, red chili flakes, thin julienne of raw mango and cucumber noodles.

Step 5 :

Cover the bowl with plastic wrap and refrigerate the cucumber noodles for 30 minutes.

Step 6 :

When ready to serve, add lemon juice and sesame seeds from top. Mix it well garnish with shredded red cabbage and mint leaves.

Step 7 :

Serve chilled and enjoy hot summers with this refreshing salad.
