Carrot Cake with white chocolate frosting is a moist delicious cake recipe you will fall in love with. It is an easy cake recipe which can be made for any occasion but especially can be enjoyed as a dessert or snack while you are on the road during summers as it doesn’t get spoiled and is a treat for all the fussy eaters who might become restless during the trip.

Step 1 :

Grease a round baking cake tin of 9×9 inches diameter with oil and preheat the oven at 180°C.

Step 2 :

In a bowl, take eggs, powdered sugar, oil, vanilla extract and beat well till the mixture is light and fluffy.

Step 3 :

In a separate bowl, sift together all-purpose flour, baking powder, baking soda and cinnamon powder.

Step 4 :

Now mix the dry ingredients with the wet ingredients in batches and make a smooth, lump-free batter.

Step 5 :

At last, add the raisins and mix it well.

Step 6 :

Pour the cake batter in a greased tin and tap the tin twice.

Step 7 :

Bake in a preheated oven for 40 minutes. Keep an eye on the cake as the temperature differs from oven to oven.

Step 8 :

Once the cake is done insert a toothpick- if it comes out clean then the cake is perfectly baked.

Step 9 :

Let the cake cool down. Meanwhile, prepare the frosting.

Step 10 : For Frosting:

Melt white chocolate in a microwave or double boiler.

Step 11 :

Heat heavy cream in pan for 30-40 seconds.

Step 12 :

Pour the warm cream over melted white chocolate and mix well till its smooth. The white chocolate ganache is ready.

Step 13 :

Keep the ganache in a refrigerator for 30 minutes.

Step 14 :

After 30 minutes beat till the ganache is light and fluffy. The white chocolate frosting is ready.

Step 15 :

Assembling the cake: Cut the cake in half horizontally and spread a layer of white chocolate frosting.

Step 16 :

Keep another layer of cake and cover the cake with white chocolate frosting from all sides.

Step 17 :

Garnish with some chopped almonds or grated carrot. Cut the cake in slices and serve!
