A nutritious South Indian salad prepared with moong dal and garnished with tempered mustard seeds!

Preparation

Step 1 :

Soak moong dal for around half an hour. Post which, wash and drain all the water.

Step 2 :

Peel and grate the carrot.

Step 3 :

Peel and cut cucumber and beetroot into small pieces.

Step 4 :

Finley dice green chillies.

Step 5 :

Mix these with the dal in a dish. Add salt and lemon juice (no cooking to be done).

Step 6 :

Heat oil till it's hot. Add mustard seeds. Once they splutter, add it to the salad.

Step 7 :

Garnish with fresh coriander leaves just before serving.
