Corn Chowder Soup

A creamy and delicious soup recipe made with the goodness of carrot, celery, bell pepper, zucchini, potato and corn.

Preparation

Step 1 :

Blend ½ cup corn with ½ cup milk in a blender.

Step 2 :

Heat a pan. Add butter and extra virgin olive oil.

Step 3 :

Add in garlic, onion and celery.

Step 4 :

Cook until the celery slightly softens.

Step 5 :

Add potato and carrot. Fry for a couple of minutes.

Step 6 :

Now add bell pepper and zucchini. Give it a quick stir.

Step 7 :

Cook for 2 minutes.

Step 8 :

Add jalapeño and thyme, corn and blended corn.

Step 9 :

Add remaining milk, water, salt and simmer for 10 minutes.

Step 10 :

Mix in pepper powder.

Step 11 :

Adjust the thickness of the soup as per your liking.

Step 12 :

If you like it spicy, add a dash of chilly oil.

Step 13 :

Serve hot with bread.
