Pink Veggie Soup

It’s a veggie soup (chicken shreds can also be added) made with coconut milk and tomatoes.

Preparation

Step 1 :

Par boil chopped potatoes and shredded cabbage. Cool and keep it aside.

Step 2 :

In a large pan, add a cup of tomato purée and 1/3 cup water. Once it starts to emit steam, add peas and salt.

Step 3 :

Cook this for a while till peas soften and the raw flavour of tomato is gone. Then add the other 2 veggies (at this stage you can also add boiled and shredded chicken).

Step 4 :

Bring it to a boil and simmer the flame. Now add half cup thick coconut milk and stir.

Step 5 :

Bring this to just 1 boil and switch off the flame.

Step 6 :

Let it rest for 2 minutes and add a little butter if you like.

Step 7 :

Now serve with bread roll.
