Spinach Tomato Soup with Corn

This recipe is ideal to cut down the calorie intake after a period of indulgence. It includes healthy ingredients such as spinach, tomato and corn.

Preparation

Step 1 :

Blanch spinach and tomatoes separately for 5 minutes or till it gets soft.

Step 2 :

Remove the skin of the tomatoes and make a thick puree.

Step 3 :

Rinse the spinach well and make a thick puree.

Step 4 :

Boil the corn with a pinch of salt.

Step 5 :

Take a pan and place it on the stove on medium heat. Add olive oil. Once hot, add cumin seeds and asafoetida.

Step 6 :

Add spinach and tomato puree to the pan and let it cook for 5 minutes.

Step 7 :

Add salt and pepper as per taste and cook it again for 2 minutes.

Step 8 :

Add the boiled corn while serving. Preferably serve hot.
