Preparation

Step 1 :

Heat a pan on a low flame. Add water, sugar and saffron. Stir till the sugar melts. Add half quantity of chopped dry fruits and mix well. Add 1/2 lemon juice and mix well. Switch off the flame and bring the mixture to room temperature.

Step 2 :

Take a mixing bowl and add milk powder, maida and milk. Prepare the batter. The consistency should be that of a dosa batter.

Step 3 :

Keep a broad bottom pan on gas on a low flame. Add sufficient pure ghee or refined oil (preferably pure ghee) for deep frying the malpua.

Step 4 :

Take a ladle full of batter and pour in the centre of the pan. It will take a round shape and slowly float up. Flip it and fry for a few seconds till it turns golden. Press it between two perforated spoons to drain the excess ghee/oil.

Step 5 :

Dip into the sugar syrup for two minutes.

Step 6 :

Garnish with chopped dry fruits and serve.
