Soya Biryani

Preparation

Step 1 :

Soak soya chunks in a mixture of some milk and hot water for at least 20 minutes. Drain and squeeze dry.

Step 2 :

Soak and boil basmati rice with ½-inch cinnamon, 2 green cardamoms and 2 cloves. Boil till 80% cooked. Strain and keep aside.

Step 3 :

Boil the ingredients under biryani masala together and cook covered for 30 minutes on medium flame. Cool and blend to a puree.

Step 4 :

Heat oil in a pot. Add the whole spices and cook till it lets out an aroma. Add the ginger-garlic paste and cook for a minute.

Step 5 :

Add the onion tomato puree and salt and cook till the oil separates. Add the turmeric powder and meat masala.

Step 6 :

Add the curd and cook for 2 minutes. Add the soya chunks and mix well. Add about 1.5-2 cups hot water and bring to a boil. Add the elaichi powder and the kewra.

Step 7 :

Add in the rice and mix well.

Step 8 :

Cover and keep the flame on sim. Cook till the curry is absorbed and the rice is dry.
