Bhuni Biryani

This recipe is from Uttar Pradesh and unlike the conventional biryani of Lucknow, it uses the concept of ‘bhunno’ or roasting rather than cooking or deep frying in oil. This ensures that the aroma is retained.

Preparation

Step 1 :

Soak rice for 30 minutes.

Step 2 :

Wash chicken pieces and pat dry.

Step 3 :

In a big non-stick vessel, heat vegetable oil.

Step 4 :

Add bay leaves and green chillies.

Step 5 :

Add diced onions. Fry till light golden brown.

Step 6 :

Add chicken pieces, red chilli powder, ginger -garlic paste, curd, garam masala and salt to taste.

Step 7 :

Stir well to allow the chicken to be cooked around 75 percent.

Step 8 :

Add soaked rice and stir to mix the ingredients on a high flame to bhunno (slow roast/slow fry) for 10 minutes.

Step 9 :

Add a bit salt to taste.

Step 10 :

Add warm water slowly and cover rice 2 inches above the surface of rice.

Step 11 :

Cover the lid.

Step 12 :

Initially put the gas on high flame till it boils.

Step 13 :

Then reduce the flame and cook with the lid on.

Step 14 :

Check the rice for its tenderness. When done, add kewra water with pinch of saffron colour.

Step 15 :

Put of flame and keep lid closed till its served. Serve with raita.
