Palak Paneer Dum Biryani

Palak paneer is everyone’s favourite and biryani is also liked by everyone. Here is a perfect combination of the two!

Preparation

Step 1 :

Boil 5 cups of water by adding salt, star anise, cardamom, cinnamon, cloves and 1 tbsp. oil. When it comes to a boil, add basmati rice and cook for 3 minutes or till rice is cooked about 60%. Strain the rice with a strainer and then wash with cold water and keep aside.

Step 2 :

Now in a mixture jar, add blanched spinach, coriander, mint leaves, green chillies and ginger and blend into a smooth paste.

Step 3 :

Now in a heavy bottom pan, add 2 tbsp. oil and heat it. Add cumin seeds and bay leaf. Add chopped onion and sauté till translucent.

Step 4 :

Now add cauliflower, capsicum, potatoes and all the dry spices. Mix well.

Step 5 :

Now add spinach puree and curd into it and cook for 2 minutes.

Step 6 :

Now cover this mixture with some half-cooked rice, paneer cubes, fried onions and some mint leaves.

Step 7 :

And 2 tbsp. of saffron milk. Repeat the same process with remaining rice, paneer, saffron milk, mint leaves and fried onions.

Step 8 :

Cover the pan with aluminium foil and place a lid over it. Cook for 10 minutes on a slow flame.

Step 9 :

After 10 minutes, switch off the flame and sprinkle coriander leaves. Serve hot with any raita.
