This recipe is spicy, wholesome and everything a biryani is meant to be!

Preparation

Step 1 :

Marinate the meat in garlic-ginger paste, vinegar, garam masala, chili powder, turmeric powder, salt and food colour. Keep it aside for an hour.

Step 2 :

Heat a dekchi or pan. Add oil and heat it. Add the marinated chicken and cook till the chicken is cooked and very little water is left.

Step 3 :

Add the yogurt, a little lemon juice and stir well.

Step 4 :

Cook till yogurt coats the chicken well.

Step 5 :

Add half of the coriander leaves, green chillies and some curry leaves. Mix well and cook for a minute. Keep aside and deep fry the remaining curry leaves.

Step 6 :

Drain on absorbent paper and keep aside.

Step 7 :

Take a large patila and add ample of water needed for the soaked rice.

Step 8 :

Put on the fire and add green cardamoms, cinnamon stick, salt and remaining lemon juice.

Step 9 :

Bring to boil and add rice. Stir after a minute and cook till the rice is 75% cooked.

Step 10 :

Drain on a colander. In the same patila, put half the rice. Add a layer of cooked chicken, keeping aside some to garnish.

Step 11 :

Cover with the remaining rice by sprinkling some fried onion, green cardamom powder, a few saffron strands, coriander leaves and green chilies.

Step 12 :

Pour ghee over this cover the pan tightly. Cook on dum for 15 minutes.

Step 13 :

Open the lid and mix lightly.

Step 14 :

Serve with fried curry leaves and cashew on the top.
