Fragrant Mutton Biryani

An age-old recipe of old Delhi families which has been passed down from generation to generation! It is deeply inspired by Mughals cooking, however, less fat is used. The spices make the biryani extremely aromatic. Readymade biryani masalas are not used and all the spices used are ground by hand which lend it a unique flavour.

Preparation

Step 1 :

Wash mutton and put it in a pressure cooker. Add one big onion, 4 - 5 cloves crushed garlic, half-inch piece of crushed ginger, cinnamon stick, two badi elaichi, peppercorns, 2 -3 cloves, salt and 1 tsp freshly ground garam masala. Tie coriander seeds and moti saunf (fennel seeds) in a small potli (bag) of muslin cloth and place it inside the pressure cooker. Add two cups water. Boil it for 15 minutes after the first whistle. After switching off the gas, let the pressure drop by itself.

Step 2 :

In a kadai, take some oil. Add whole spices and let them splutter. Add chopped onion and sauté till golden brown. Add crushed ginger and garlic and sauté it for another 2 - 3 minutes. Add salt, red chilli powder and freshly made garam masala. Sauté for one or two minutes.

Step 3 :

Drain water from the soaked rice. Add the drained rice in the onion masala and carefully turn the rice in the masala taking care not to break the rice. Switch off the gas immediately.

Step 4 :

Once the pressure drops in the cooker, open the lid. Take out the muslin potli, squeeze the potli in the cooker so as to drain the aromatic liquid. Discard the potli.

Step 5 :

Add the prepared masala rice in the pressure cooker. Add more water if required. Close the lid and put it on flame. After the first whistle, reduce the gas stove to the minimum heat and cook for another 3 - 4 minutes. Let the pressure drop by itself.

Step 6 :

Garnish with crispy dark brown onions. Serve hot accompanied by curd and green coriander chutney.
