Spinach Cheese Ravioli

A perfect combination heath and taste! Iron is rich in spinach whereas milk is loaded with calcium.

Preparation

Step 1 :

Mix 1 cup maida, 1/2 cup blanched spinach puree, 2 tablespoons olive oil and salt as per taste. Make a medium soft dough and keep it aside for 20 minutes.

Step 2 :

Mix 50gm grated cheese, 1/2 cup finely chopped capsicum, chilli flakes, oregano and salt to taste. The stuffing is ready.

Step 3 :

Take a small piece of dough and make a ball of it. Flatten it to thin sheets with a rolling pin. Take a round cookie cutter and cut it into round shapes. Place the stuffing in the centre of the one piece and stick it to another round piece with the water. The ravioli is ready to cook. Make sure that no air goes inside the ravioli. To cook the ravioli, take 2 cups of water, a pinch of salt, 1 tsp oil in the boiler. Boil it for 2 minutes and then place all the ravioli in it. Let it simmer for 10 minutes. Strain and pour cold water on it. The ravioli is ready.

Step 4 :

For making the white sauce, put a non-stick pan on flame. Take 1 tablespoon butter in pan and 1 teaspoon maida and salt. Keep it on low flame and pour 1 cup milk in the mixture. Whisk it till it becomes smooth. Make sure that there are no lumps in it. Add some crushed black pepper, chilli flakes, oregano and salt. Turn off the flame, add 1 tablespoon grated cheese and whisk it. The white cheese sauce is ready.

Step 5 :

Take a serving plate and add the ravioli. Top it with white sauce over it. Garnish it with grated cheese. Serve hot.
