Nutritious Cheezalate

My daughters are fussy eaters. I have forever been on a lookout for interesting recipes which are nutritious and delicious. Being a working mom, I also needed something which can be made quickly. That's when it occurred to me one day that I can create a unique dish which is a blend of nutritious ingredients and also a complete meal in itself. Cheezalate is extremely versatile and can also be served as a snack in the form of wedges. One can add any flavour or vegetable to the recipe.

Preparation

Step 1 :

Crumble 2 small chapattis or bread slices in a mixer (fresh bread or roti will not form crumbs so use the top bread, corners or a day-old bread/roti. You can also use readymade crumbs). Keep aside.

Step 2 :

Whisk 2 eggs, a tablespoon of milk, salt, oregano, pepper to taste or pizza sauce in a blender till frothy.

Step 3 :

Grate a small bowl of pizza cheese.

Step 4 :

Finely dice a small bowl of seasonal vegetables like capsicum, carrots, onion, tomatoes or corn.

Step 5 : Process

Blend crumbs and whisked egg mixture together in a blender.

Step 6 :

After smearing little oil, spread the mixture evenly on a preheated hot heavy-bottom deep utensil. (non-stick kadhai works best).

Step 7 :

Cover immediately and let it cook untouched for 4 minutes on a low flame without turning the Cheezalate.

Step 8 :

Once the top is cooked, spread finely diced seasonal vegetables and cover with grated cheese while still on the low flame.

Step 9 :

Cover again and let the cheese melt for few more minutes.

Step 10 :

Remove and serve hot once the vegetables are cooked and the cheese melts.
