Mushroom Risotto

A melt-in-your-mouth creamy mushroom risotto!

Preparation

Step 1 :

Chop 100 gm of mushroom, 5 cloves of garlic and 1 onion.

Step 2 :

Sauté the vegetables in 2 tablespoon of olive oil.

Step 3 :

Prepare vegetable stock (or buy ready made from shop).

Step 4 :

Sauté 1 cup risotto rice in a pan in some olive oil.

Step 5 :

Add vegetable stock 2 spoons at a time to the rice and cook slowly until rice completely absorbs the stock.

Step 6 :

Once the rice is cooked, add salt, pepper and mixed herbs to taste.

Step 7 :

Add the sautéed vegetables to the rice.

Step 8 :

Add grated cheese slowly to the rice so that it is properly incorporated and melts. Keep adding cheese until consistency is thick and creamy.

Step 9 :

Garnish with olive slice and basil leaves.
