Preparation

Step 1 :

Heat oil or butter in a pan. Add chopped onion, garlic, capsicum and corn. Sauté it for 1 -2 minutes.

Step 2 :

Add 2-3 cups cooked rice (leftover rice) and mix it well. Sauté for another 2-3 minutes.

Step 3 :

Add chilli flakes, black pepper and salt (as per taste). Keep stirring for 1 more minutes.

Step 4 :

Finally, add chopped spring onion and graded cheese.

Step 5 :

Cover the lid for 5 minutes or bake it for 3-4 minutes.

Step 6 :

Garnish with basil leaves and your cheesy rice is ready to eat.
