Eggplant Grilled Sandwich

Preparation

Step 1 :

Place the rack in upper third of oven and preheat it to 220 degrees. Cut the eggplant into ¼ inch thick slices.

Step 2 :

Line a sheet pan with butter paper and brush it with olive oil. Spread the eggplant slices on the oiled baking sheet in a single layer, then sprinkle with salt and pepper.

Step 3 :

Place it in oven and roast for 20 minutes, flipping eggplant slices over half way through. Set aside.

Step 4 :

Meanwhile, preheat a griller to medium heat. In a small bowl, stir together the mozzarella, parmesan and fresh basil. Spread butter on one side of each bread slice.

Step 5 : Assemble sandwiches

Spread the unbuttered side of each bread slice with 1/4 of the mozzarella cheese mixture. Top two bread slices with roasted eggplant each, then set the remaining bread slices on top, cheese side down. Grill sandwiches 3-4 minutes in a griller, until the bread is toasted and sandwich is warmed through. Slice it in half and serve immediately.
