Quinoa Pockets

Preparation

Step 1 :

Take the flour and add salt, olive oil and water. Mix well. Make a tight dough. Leave it aside for 15-20 minutes.

Step 2 :

Wash quinoa and cook it in 2 cups of water. Let it cool down.

Step 3 :

Take a small dough and make a round roti.

Step 4 :

Add cooked quinoa, capsicum, sweet corn, tomato, salt, black pepper and mozzarella cheese in a bowl. Mix well.

Step 5 :

Spread some stuffing on half side of the roti. Fold the second half over the stuffing. Close it and press it on corners so that stuffing doesn't spill out.

Step 6 :

Heat oil in a pan.

Step 7 :

Fry these pockets in oil till they turn golden.

Step 8 :

You can add the garnish of your choice and serve with tomato sauce.
