Quinoa Salad

A good amalgamation of veggies, this recipe (my own) is suitable for all ages. As it is a bit bland, kids love it too. You can add fruits instead of the veggies for a different taste.

Preparation

Step 1 :

Take a cup of quinoa with 2 cups of water and boil it for 15 minutes.

Step 2 :

You can pre boil 1 beetroot, a cup of sweet corn (optional) and keep it ready.

Step 3 :

While the quinoa is getting cooked, cut 1/2 cucumber, 1/2 carrot, 1/2 cup bell pepper, 1/2 cup zucchini (optional).

Step 4 :

Add little olive oil to a pan and sauté all the above cut veggies with a tinge of salt and pepper.

Step 5 :

Once they are a bit crisp, add the boiled beetroot and corn. Mix evenly for about a minute. Switch off the gas.

Step 6 :

Finally garnish it with basil, cilantro, a few drops of lime juice and few pomegranate seeds.
