Mango Banana Quinoa Muffins

Preparation

Step 1 :

Preheat oven to 220-degree Celsius.

Step 2 :

Prepare muffin tin with 12 liners.

Step 3 :

In a large bowl, mix the flours, cooked quinoa, baking powder, baking soda and cane sugar.

Step 4 :

In a separate bowl whisk the egg.

Step 5 :

Add coconut oil, Greek yogurt, vanilla extract and mashed banana.

Step 6 :

Pour the wet ingredients into the dry ones and mix until well combined.

Step 7 :

Add diced mango and gently fold in.

Step 8 :

Pour into muffin tins and bake for 5 minutes, then reduce the temperature to 180-degree Celsius and bake another 20 - 25 minutes.
