Preparation

Step 1 :

In a pot, bring salt water or vegetable stock to boil. Add quinoa and let it cook until all the water gets absorbed and the quinoa turns translucent (roughly 20 minutes). Add olive oil and keep aside.

Step 2 :

Heat a pan and add oil, spring onion, garlic and chillies. Sauté for a bit and add the diced zucchini, bell peppers, dried apricot and pinto beans. Sauté well for 2 minutes. Season with salt and pepper.

Step 3 :

Mix it with cooked quinoa and garnish with rosemary and sage.
