Eggless Quinoa Mango Cake

Preparation

Step 1 :

Add quinoa to a dry skillet and toast until it turns light brown.

Step 2 :

Grind the quinoa.

Step 3 :

Sift flour with baking soda, baking powder and salt.

Step 4 :

Mix 1 cup of sugar. Fold in the vanilla, quinoa flour and milk.

Step 5 :

Transfer the batter to a pan. Place it in the oven and bake in the microwave for 4 minutes (or until cake tester comes out clean). Remove from oven.

Step 6 :

Dissolve corn flour in 4tbsp of water.

Step 7 :

Heat the pan and add 1tsp water and sugar. When it dissolves, add the mango puree and cornflour. Stir continuously. When the sauce becomes glassy and thick, switch off gas.

Step 8 :

Gently spread this mixture on top of the cake. Let it cool down and then serve.
