Schezwan Fried Quinoa, a delicious Indo - Chinese recipe that can be enjoyed for breakfast or lunch. It is high on protein, thanks to the vegetables and egg. If you want to add meat for extra protein, you could include shredded chicken to this recipe.

Preparation

Step 1 :

Add vegetable stock to a pan with some salt, oil and quinoa.

Step 2 :

Bring it to boil. Put the lid on, reduce the flame to minimum and leave it for 15 minutes.

Step 3 :

After 15 minutes, let it sit for 5 minutes.

Step 4 :

In a large pan, heat olive oil over medium-high heat.

Step 5 :

Add onion and garlic and stir fry till they turn translucent.

Step 6 :

Add mushroom, peas and carrots and cook for 2 or 3 minutes until they soften.

Step 7 :

Move the veggies over to one side of the pan and on the other side of the pan, scramble 1 egg.

Step 8 :

Add Schezwan sauce, soy sauce and some salt.

Step 9 :

Combine the veggies and eggs and stir in cooked quinoa.

Step 10 :

Sprinkle spring onions on the quinoa and finish it.
