Quinoa Biryani

A must have for all special occasions, and popular throughout the subcontinent, Biryani is a mouth watering, spicy and rich delicacy that can be found on any restaurant menu in India. Made with a host of vegetables and spices, this dish takes time and practice to perfect, but is worth the effort.

Preparation

Step 1 :

Cook the quinoa in veg stock. Set aside.

Step 2 :

Sweat the onions in oil, add the spices, and add the vegetables.

Step 3 :

Mix in with the Quinoa. Check seasoning.

Step 4 :

Give the quinoa a little dungaar (smoke) by burning the coal and then placing it in a small bowl on top of the quinoa with ghee & garlic. Close the entire thing with foil.

Step 5 :

Place in a small microwave bowl. Sprinkle some water over it.

Step 6 :

Heat in the micro & de-mould on a plate. Garnish with caramelised onions & coriander
