Sweet quinoa salad

It’s hard to make children (and even adults for that matter) eat healthy food and for this very reason, sweet quinoa salad can be prepared. The best part is that the sweetness only comes from all natural ingredients such as pomegranate, dried cranberry and pumpkin. Lemon juice and pepper are further added to balance the palate.

Method

Step 1 :

Peel and cut the pumpkin into small pieces. Put this in a pressure cooker for 3 whistles (till it is completely cooked and soft). Let it cool down.

Step 2 :

Take 1 cup of quinoa, add two cups of water and bring it to boil. Let it simmer for 20 minutes till it is completely cooked. Let it cool down.

Step 3 :

Make a dressing of the oil, lemon juice, salt and pepper.

Step 4 :

In a big bowl, add the quinoa, diced pumpkin, pomegranate, dried cranberry, raisins and pine nuts.

Step 5 :

Drizzle the dressing over it and toss well.
