Exotic Soup

This soup is prepared with parts of vegetables that you would otherwise throw away.

Preparation

Step 1 :

Peel ½ kg parval (only use the skin that you would otherwise throw away).

Step 2 :

Chop the stem of ½ kg cauliflower or ½ kg cabbage (again something that you would throw away).

Step 3 :

Chop 2 tomatoes, 1 onion and 1 potato.

Step 4 :

Sauté all of this in 1 tbsp. of butter in a pan till it turns soft.

Step 5 :

Add 2 cups of water, 1 tsp. crushed garlic and salt as per taste. Pressure cook it for one whistle.

Step 6 :

Open it after five minutes. Puree the cooked vegetables.

Step 7 :

Sieve it if you want a thin broth. Bring it to boil and serve.
